Experts say one of the best ways to protect yourself from the coronavirus is to strengthen your immune system. You can do that by eating foods that are packed with vitamins and minerals, like avocado.

WHAT IS IN AVOCADO THAT MAKES IT EXTRA SPECIAL?

The best thing about avocado is its potassium content, which is even higher than that of bananas. It also has monounsaturated fatty acids, best in keeping your heart healthy. It is also rich in fiber and is perfect for people who have high triglyceride and cholesterol levels. Furthermore, it also has vitamins C, K, E, and B6, and niacin, folate riboflavin, magnesium, beta-carotene, lutein, omega-3 fatty acids, and pantothenic acid, according to Health Line.

Here are two recipes you can do with an avocado:

THE SWEET 'N' SAVOURY FOR BREAKFAST

For this healthy breakfast, what you will be needing are wheat bread, one whole ripe avocado (mashed), oranges (peeled), balsamic glaze, and fresh basil. Nicole Goncalves, a social media influencer, shares this recipe in her YouTube account named HealthNut Nutrition.

First, you have to toast a piece of wheat bread and spread mashed avocado on it. Second, put freshly peeled oranges on top to add a bit of excitement. Third, dash a bit of balsamic glaze to add up an extra flavor. Lastly, topped everything with fresh basil for another load of fiber.

AVOCADO LIME CHEESECAKE FOR DESSERT

To make this mouth-watering dessert, you will be needing 300 grams of cream cheese, 350mL of whip cream (200mL for mixing the avocado), a medium-sized avocado (cut into cubes), 2 lime (zested and juiced), a cup of granulated sugar, a sachet (about 2.5 tsp) of gelatin powder, 1 cup of crushed graham, 100 grams of unsalted butter (melted), and lime for garnishing.

The first thing to do is to place the crushed Grahams in a bowl and mix it with melted butter until fully incorporated. Press the mixture onto the bottom of a 10-inch pan, then chill in the freezer for about 10 minutes.

The second thing to do is to incorporate and stir 150 mL of whipping cream and gelatin in a pot until the latter is dissolved. Bring the mixture into a boil while stirring for about 3 mins. Let cool.

Using a hand mixer, mix avocado, sugar, cream cheese, remaining whip cream, and lime zest and juice until smooth. Add your gelatin-cream mixture and keep stirring until everything is well-combined producing a creamy batter.

Lastly, pour the batter in your cake's graham crust. After doing so chill your cake in the freezer for at least 2 hours to set. Before serving, make sure to make your avocado lime cheesecake more presentable by garnishing it with lime zest and slices on top.
